Zesty Lime, Shrimp, & Avocado Salad

INGREDIENTS

  • ¼ cup red onion, diced
  • 2 limes, juiced
  • 1 teaspoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 medium tomatoes, diced
  • 1 pound cooked shrimp, peeled & coarsely chopped
  • 1 jalapeno, seeds removed, diced
  • 2 avocados, chopped in ½ inch cubes
  • 2 Tablespoons fresh cilantro, chopped

INSTRUCTIONS

  1. In a small bowl, combine red onion, lime juice, olive oil, salt & pepper. Set aside to marinade approximately 15 minutes.
  2. In a medium-sized bowl, add tomatoes, shrimp, jalapeno, avocados, & cilantro. Drizzle with lime mixture. Gently toss to combine ingredients. Serve immediately.
