Yogurt Marinated Grilled Chicken

INGREDIENTS

  • 1/2 cup plain Greek yogurt
  • 2 minced garlic cloves
  • 2 tablespoons lemon juice
  • Zest of one lemon
  • 1 tablespoon olive oil
  • 1/2 teaspoon each of chili powder, ground ginger, cumin, and salt
  • 6 (5 oz) skinless boneless chicken breasts

INSTRUCTIONS

  1. In large bowl, combine all ingredients except chicken breasts. Pour 2/3 of yogurt mixture into ziplock bag; add chicken breasts, turning to coat. Place chicken in refrigerator and marinate 8 hours or overnight. Reserve remaining marinade in refrigerator to serve with grilled chicken.
  2. Prepare grill, remove chicken from marinade and cook over medium heat for about 6 to 8 minutes on each side.
  3. Serve grilled chicken with reserved yogurt marinade, if desired.
