Watermelon Pizza with Feta and Mint

INGREDIENTS
- 1 seedless watermelon
- 1 cup Kalamata olives, chopped
- 1 cup crumbled feta
- ½ cup green or red onions, diced
- 1 cup fresh mint, chopped
- 1/3 cup fresh parsley, chopped
- 3-4 limes, juiced
- ¼ cup olive oil
- Salt and fresh ground black pepper, to taste
INSTRUCTIONS
- Slice the watermelon vertically into 1 ½ inch thick slices. (You should get about 4 good slices per watermelon).
- Arrange each slice on a cutting board and (just like a pizza) top each slice of watermelon with 1/4th of the olives, feta, onions, mint, and parsley. Drizzle pizza with 1/4th of the lime juice and olive oil, then sprinkle with salt and pepper.
- Slice each watermelon pizza into 8 slices. Serve immediately. Chop up the remaining watermelon and serve as desired.
