Sweet Corn, Mango and Black Bean Salad

INGREDIENTS

  • 2 cans black beans, drained and rinsed well
  • 1 cup frozen mango chunks, thawed and diced
  • 1 cup EACH red and green bell peppers and red onion, diced
  • 2 cups frozen sweet corn, thawed
  • 2 TB fresh basil, chopped OR 1 Teaspoon dried basil
  • 1 jalapeno, seeded and diced (optional)
  • 2 Tablespoon extra virgin olive oil
  • 3 Tablespoon balsamic vinegar
  • 1 Teaspoon cumin powder
  • Cracked black pepper to taste

INSTRUCTIONS

  1. Combine first 6 ingredients in a large bowl. Mix together oil, vinegar, cumin and pepper and pour over salad. Refrigerate until ready to eat. ENJOY!
