Strawberry Mediterranean Salad

INGREDIENTS
- 1/2 pint fresh strawberries, sliced
- 1 cup fresh mushrooms, sliced
- 1/2 cup red bell pepper, julienne sliced
- 1/2 cup walnuts, chopped
- 1/3 cup feta cheese, crumbled
- 1/4 cup green onion, sliced
- 1 (10 oz) package fresh baby spinach

- 1/3 cup olive oil
- 1/3 cup canola oil
- 1/3 cup balsamic vinegar
- 1 tablespoon water
- 1 teaspoon salt
- pepper to taste
INSTRUCTIONS
- Combine salad ingredients except feta cheese and walnuts; set aside.
- Combine dressing ingredients in blender container; blend until smooth.
- Pour over salad, toss, and set aside at room temperature for 5-10 minutes.
- Add feta cheese and walnuts as topping. Sprinkle with pepper to taste.
