Spinach Madeleine

INGREDIENTS

  • 2 (10 ounce) packages frozen chopped spinach
  • ½ cup liquid from cooked spinach
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1 tablespoons flour
  • ½ cup evaporated milk
  • ½ teaspoon salt
  • ¼ teaspoon each garlic salt and celery salt
  • 1 teaspoon Worcestershire sauce
  • 1 cup reduced fat pepper jack cheese
  • 1 tablespoon butter, melted
  • 1/3 cup Panko breadcrumbs

INSTRUCTIONS

  1. Cook spinach according to package directions. Drain, squeezing out as much liquid as possible and reserve ½ cup liquid for recipe. Set spinach and liquid aside.
  2. In a large skillet, heat oil and add chopped onion cooking over low heat until onions are translucent. Add flour gradually, stirring until smooth. Add spinach liquid and then milk, stirring constantly. Cook until thick. Add seasonings, cheese and reserved spinach cooking slowly and stirring constantly just until cheese melts.
  3. Place spinach mixture in 8x12 inch baking dish sprayed with cooking spray. Top with breadcrumbs and bake at 350 degrees for 30 minutes.
