Spicy Chocolate Chili

INGREDIENTS
- 2 teaspoons olive oil
- 1 large yellow onion, chopped
- 1 clove garlic, minced
- 1 large red bell pepper, chopped
- 1 ½ pounds 93% lean ground beef
- 3 tablespoons dark brown sugar
- 3 tablespoons chili powder
- 1 tablespoon unsweetened cocoa powder
- 1 teaspoon ground cumin
- ½ teaspoon crushed red pepper flakes
- ¼ teaspoon salt
- ½ teaspoon fresh ground black pepper
- 2 (15-ounce) cans pinto beans, rinsed & drained
- 2 (14.5-ounce) cans diced tomatoes
- 2 cups low-sodium beef broth
- 2 ounces unsweetened chocolate, chopped
- ½ cup light sour cream
- ½ cup chopped green onions
INSTRUCTIONS
- Heat a large Dutch oven or soup pot over medium-high heat. Add olive oil, onion, garlic, bell pepper, & ground beef. Sauté 8-10 minutes, or until beef is browned.
- Add to pot brown sugar & the following 9 ingredients (through beef broth). Stirring to combine & bring to a boil. Reduce heat. Cover & simmer 15-20 minutes, or until slightly thickened, stirring occasionally.
- Add chopped chocolate, stirring to melt. Ladle into soup bowls & top with sour cream. Garnish with green onions.
