Red, White and Blue-Berry Popsicles & Chocolate-Covered Strawberry Popsicles

INGREDIENTS

  • 1 cup fresh blueberries
  • 1 cup fresh strawberries
  • 2-1/2 cups 2% Greek yogurt, plain or vanilla
  • 1 tablespoon honey

INSTRUCTIONS

  1. Rinse and pick the stems from the blueberries, same goes for the strawberries, remove the green stem.
  2. Leave the blueberries whole, but cut the strawberries in half.
  3. Place the fruit into the food processor or blender and add honey.
  4. Pulse until the fruit mixture is loose, but still has noticeable bits of fruit.
  5. Spoon the mixture into a bowl and add the plain or vanilla yogurt, gently swirl the ingredients together leaving spirals of creamy yogurt.
  6. Spoon the yogurt and fruit mixture into the popsicle molds to the top, place on the lid and push the popsicle sticks into the slots.
  7. Place the popsicle mold in the freezer overnight or at least 4 hours to get solidly frozen popsicles.
  8. Remove the popsicles just before serving and run warm water along the sides to loosen them from the mold.
