Oven Baked Fajitas

INGREDIENTS
- 1 pound boneless, skinless chicken breast, cut into strips.
- 1 red onion, sliced
- 1 x 15 oz can diced tomatoes with green chilies
- 1 green bell pepper, sliced
- 1 red, yellow, or orange bell pepper, sliced
- 1 Tablespoon olive oil
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- ½ teaspoon garlic powder
- ¼ teaspoon salt
INSTRUCTIONS
- Preheat oven to 400⁰ F. On a cookie sheet, toss to combine sliced red onion, bell peppers, tomatoes & chicken.
- In a small bowl, mix together olive oil, chili powder, cumin, garlic powder, & salt. Drizzle oil mixture over chicken & toss to coat.
- Evenly spread chicken mixture over cookie sheet. Bake uncovered 20-25 minutes, or until chicken is done. Serve with warm tortillas and your favorite toppings!
