My Papa’s Chili

INGREDIENTS

  • 2 medium onions, chopped
  • 2 cloves garlic, chopped
  • 1 jalapeno pepper, finely diced
  • 2 tablespoons canola oil
  • 2 pounds 96% lean ground beef
  • 3 tablespoons chili powder
  • 1 tablespoon oregano
  • 1 teaspoon ground cumin
  • 3 tablespoon flour
  • 2 teaspoons salt
  • 1 (10 oz) can diced tomatoes & green chilies
  • 1 (8 oz) can tomato sauce
  • 2 (15 oz) cans pinto beans, rinsed & drained

INSTRUCTIONS

  1. In large Dutch oven, sauté onions, garlic and diced jalapeno in oil. Add ground beef and brown over medium heat.
  2. In small bowl, mix together chili powder, oregano, cumin, flour and salt. Add to meat and cook, stirring constantly for 2 minutes.
  3. Add diced tomatoes and green chilies, tomato sauce and 2 – 4 cups water. Simmer, covered, for 30 minutes over low heat.
  4. Add additional water to adjust to desired consistency. Add pinto beans and simmer another 10 minutes.
