Mason Jar Shrimp and Feta Cobb Salad

INGREDIENTS
- ½ cup cherry tomatoes, sliced
- 2 tablespoons nonfat or yogurt-based dressing of your choice
- ½ cup cucumber, chopped
- 1-2 tablespoons red onion, diced
- 1 ½ – 2 cups greens (Romaine, spring mix, baby spinach, etc.)
- ¼ cup feta cheese, crumbled
- 3 ounces cooked shrimp
- 1 boiled egg, chopped
- ¼ small avocado
INSTRUCTIONS
- Layer tomatoes and vinaigrette in the bottom of a wide-rimmed Mason jar. Add cucumber, red onion, greens, feta cheese, shrimp and boiled egg. Cover with lid and seal until lunch-time, or overnight (up to 18 hours).
- Once ready to eat, shake jar to combine ingredients and enjoy!
