Mason Jar Pesto Chicken Pasta Salad

INGREDIENTS

  • ½ cup cherry tomatoes, halved
  • 3-4 tablespoons prepared pesto
  • 1 ounce fresh mozzarella cheese (in brine), chopped
  • 2/3 cup prepare whole wheat penne noodles
  • 3 ounces rotisserie chicken or leftover meat, shredded
  • 1 ½-2 cups chopped greens (arugula, Romaine, spring mix, spinach, kale, etc.)

INSTRUCTIONS

  1. Layer bottom of a wide-rimmed Mason jar, starting with pesto, then tomato, and pasta. Add cheese, greens, and shredded meat. Top with pine nuts, if desired, cover with lid and refrigerate overnight or until lunch time. Careful not to tip jar, or else your salad will wilt!
  2. Once ready to eat, shake jar to combine ingredients. Enjoy immediately.
