Maple-Glazed Pork Chops

INGREDIENTS
- 3 tablespoons lightly packed brown sugar
- 2 teaspoons ground black pepper
- 1/2 teaspoon salt
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 4 (5 oz) center-cut boneless pork chops
- 3 tablespoons pure maple syrup
- 2 tablespoons spicy brown mustard
INSTRUCTIONS
- To prepare rub, stir together brown sugar, pepper, salt, onion powder and paprika in small bowl.
- Place pork chops in flat baking dish and coat the chops with rub mixture on both sides. Cover and place in refrigerator for 4-8 hours or overnight. (The longer the chops can sit in the rub, the more intense the flavor!)
- When ready to grill, prepare glaze by stirring together maple syrup and mustard in small bowl; set aside.
- Prepare grill. Heat coals to medium-high heat. Place pork chops on grill and cook for 5 to 7 minutes on one side. Turn and cook for another 5 to 7 minutes depending on thickness of the chops.
- Brush the chops with maple-mustard glaze and cook for 1 minute. Turn, brush with glaze and cook an additional minute. Remove chops to serving plate and top with remaining glaze, if desired.
