Kale & Quinoa Salad

INGREDIENTS
- 1 (8.5 oz) pkg quinoa & brown rice blend
- 1 small bunch kale
- ¼ cup olive oil
- 3 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon black pepper
- ½ teaspoon salt
- ½ cup coarsely chopped pecans
- ¼ cup craisins, 50% less sugar
- ¾ cup low-fat feta cheese
INSTRUCTIONS
- Microwave quinoa and rice blend package for about 90 seconds and allow to cool.
- Wash and chop kale; place in large salad bowl.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, pepper and salt. Drizzle dressing over kale.
- Add cooled quinoa, pecans, craisins and feta to the dressed kale and toss well.
