Kale & Quinoa Salad

INGREDIENTS

  • 1 (8.5 oz) pkg quinoa & brown rice blend
  • 1 small bunch kale
  • ¼ cup olive oil
  • 3 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • ½ cup coarsely chopped pecans
  • ¼ cup craisins, 50% less sugar
  • ¾ cup low-fat feta cheese

INSTRUCTIONS

  1. Microwave quinoa and rice blend package for about 90 seconds and allow to cool.
  2. Wash and chop kale; place in large salad bowl.
  3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, pepper and salt. Drizzle dressing over kale.
  4. Add cooled quinoa, pecans, craisins and feta to the dressed kale and toss well.
