Italian Chicken with Peppers & Olives

INGREDIENTS
- 8 skinless bone-in chicken breasts
- 3 tablespoons canola oil for cooking
- 4-5 garlic cloves, crushed
- 4 oz. Kalamata olives
- 6 oz pepperoncini’s (save juice)
- 4 oz. sun dried tomatoes
INSTRUCTIONS
- Brown chicken in olive oil, and garlic. Add remaining ingredients and about 1/3 juice from both olives and pepperoncini.
- Place in oven at 350 degree for one hour, covered.
- Serve over whole wheat angel-hair pasta, if desired.
