Grilled Tuna w/Fresh Mango Salsa

INGREDIENTS

    • 2 tablespoons lime juice
    • 1 teaspoon olive oil
    • 4 (4-ounce) tuna steaks
    • Vegetable Cooking spray
        Fresh Mango Salsa
      • 2 cups plum tomatoes, seeded and diced
      • 1 1/2 cups diced peeled ripe mango
      • 1/4 cup finely diced red onion
      • 1/2 cup chopped fresh cilantro
      • 2 tablespoon fresh lime juice
      • 1 tablespoon cider vinegar
      • 1 teaspoon sugar
      • 1/2 teaspoon salt
      • 1/2 teaspoon black pepper
      • 2 cloves garlic, minced

INSTRUCTIONS

  1. Combine lime juice and olive oil; brush on tuna.
  2. Coat grill rack with cooking spray; place on grill over medium-hot coals.
  3. Place tuna on rack, and cook, covered, 5 minutes on each side or until done.
  4. Serve with Fresh Mango Salsa.
  5. Combine first 7 ingredients of Mango Salsa. Stir in 1/2 teaspoon salt,1/2 teaspoon pepper, and garlic.
  6. Cover and chill thoroughly
