Grilled Tuna w/Fresh Mango Salsa
Entree
INGREDIENTS
- 2 tablespoons lime juice
- 1 teaspoon olive oil
- 4 (4-ounce) tuna steaks
- Vegetable Cooking spray
- Fresh Mango Salsa
- 2 cups plum tomatoes, seeded and diced
- 1 1/2 cups diced peeled ripe mango
- 1/4 cup finely diced red onion
- 1/2 cup chopped fresh cilantro
- 2 tablespoon fresh lime juice
- 1 tablespoon cider vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
INSTRUCTIONS
- Combine lime juice and olive oil; brush on tuna.
- Coat grill rack with cooking spray; place on grill over medium-hot coals.
- Place tuna on rack, and cook, covered, 5 minutes on each side or until done.
- Serve with Fresh Mango Salsa.
- Combine first 7 ingredients of Mango Salsa. Stir in 1/2 teaspoon salt,1/2 teaspoon pepper, and garlic.
- Cover and chill thoroughly
