Grilled Halibut with Lemon-Basil Butter

INGREDIENTS
- 1 cup loosely packed fresh basil leaves
- 1 medium shallot, coarsely chopped
- 6 tablespoons unsalted butter
- 1 teaspoon lemon zest
- ½ teaspoon salt
- 6 (6 oz.) halibut fillets
INSTRUCTIONS
- Place basil and chopped shallot in mini food processor to finely chop.
- Add butter and process until blended stopping occasionally to scrape down sides. Transfer to small bowl; stir in lemon zest and season with salt.
- Rub grill grate with olive oil. Heat the grill to medium and cook halibut about 4 to 5 minutes on each side or until fillets are just opaque in center. Transfer fish to individual plates, spread each with 1 tablespoon lemon-basil butter and serve.
