Grilled Ginger-Lime Red Snapper

INGREDIENTS

  • 2 cloves garlic, minced
  • ½ teaspoon Sambal Oelek (chilli paste)
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons fresh lime juice
  • 2 tablespoons brown sugar
  • 2 tablespoons fresh cilantro, chopped
  • 1½ pounds red snapper fillets
  • 1 tablespoon sesame oil
  • 2 tablespoons low‑sodium soy sauce
  • 1 lime, cut into wedges

INSTRUCTIONS

  1. Prepare charcoal grill. Lightly rub grill grate with oil to prevent sticking.
  2. In mini food processor or blender, combine garlic, Sambal Oelek, ginger, lime juice, brown sugar and cilantro. Add 2 tablespoons of water and process until smooth.
  3. Pour ginger mixture into small bowl; set aside.
  4. Combine sesame oil, soy sauce and 1 tablespoon ginger mixture in shallow baking dish. Add fish fillets, turning to coat. Cover with plastic wrap and refrigerate for 15-20 minutes.
  5. Grill fillets over medium-high heat for 4 to 5 minutes per side or until fish flakes easily with fork.
  6. Serve with a squeeze of lime and drizzle evenly with remaining ginger-lime sauce.
