Grilled Chicken w/Black Bean Salsa

INGREDIENTS

  • 1/4 cup diced onion
  • 1/2 teaspoon minced garlic
  • 1 (14 oz) can black beans, rinsed and drained
  • 2 teaspoons ground chipotle chile
  • 1 cup chicken broth
  • 1/4cup diced tomatoes
  • 1 teaspoon minced fresh cilantro
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon McCormicks Montreal Chicken
  • 4 (5 oz) skinless, boneless chicken breast halves

INSTRUCTIONS

  1. Spray large saucepan with cooking spray. Saute onion and garlic over medium heat until onions are translucent. Add beans, chipotle, broth, tomatoes, and salt; simmer 15 to 20 minutes. Remove from heat and stir in cilantro.
  2. Puree half the bean mixture in a blender. Add back to beans and mix together.
  3. Combine olive oil, chile powder and Montreal Chicken seasoning in small bowl; mix to form a paste. Rub paste over chicken breasts.
  4. Grill or broil chicken 3 to 5 minutes per side; or until no longer pink. Top with black bean sauce.
