Grilled Bourbon Shrimp

INGREDIENTS
- 4 wooden skewers
- 3 tablespoons pure maple syrup
- 3 tablespoons bourbon
- 1 tablespoon soy sauce
- 1 tablespoon Dijon mustard
- 24 (~1lb) extra-large shrimp, peeled and deveined, tail-on
- 24 (~1c) 1-inch pieces of fresh pineapple
- 1/2 red onion, cut into 1-inch pieces
- 1/4 teaspoon Cajun seasoning
INSTRUCTIONS
- Soak wooden skewers in water for 30 minutes. Preheat grill to medium heat.
- Prepare sauce by combining maple syrup, bourbon, soy sauce, and Dijon mustard in medium bowl. Stir in shrimp and toss well. Allow to marinate for about 10 minutes.
- Remove shrimp from marinade and thread on skewers alternating with pieces of onion and pineapple. Season with Cajun seasoning. Grill over medium heat for 3 minutes on each side or until shrimp are cooked through.
- Serve over rice blend seasoned with Cajun seasoning, if desired.
