Green Chile Strata w/Ham
Breakfast
INGREDIENTS
- 3 flour tortillas
- 2 cups reduced fat Monterrey Jack cheese shreds
- 1 cup reduced fat sharp Cheddar cheese shreds
- 1 (13 ounce) carton Bueno Mild Frozen Green Chili or 3 (4 oz) cans green chiles, drained
- 1 1/2 cups finely chopped lean ham
- 6 eggs
- 2 1/2 cups 1% milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
INSTRUCTIONS
- Spray 9 x 13-inch baking dish. Cover bottom of dish with tortillas – tear to fit, if necessary.
- Mix cheeses together. Sprinkle ½ the cheese mixture, 1/2 of chiles, and 1/2 of ham. Repeat.
- Whisk together eggs, milk, salt and pepper and pour over cheese-chili mixture. Place in refigerator overnight.
- In the morning, place strata in oven and bake at 350 degrees for 45 minutes, then reduce heat to 250 degrees F for 15 minutes. Strata is done when firm to touch. Let sit 5 minutes and serve.
