Garden Quinoa Patties

INGREDIENTS

  • 1 T cooking oil
  • 3 eggs, beaten
  • 1 pkg Quick Heat Quinoa (approx. 2 cups)
  • ½ c breadcrumbs
  • ¼ c parmesan cheese, grated
  • ¼ c onion, minced
  • ¼ c carrot, minced
  • ¼ c zucchini, minced
  • 2 T fresh parsley, chopped
  • 2 cloves garlic, minced
  • ½ t salt
  • ¼ t lemon pepper

INSTRUCTIONS

  1. Heat oil in a large skillet over medium heat.
  2. In a large bowl, beat eggs. Add quinoa along with the rest of ingredients and mix until combined. Let mixture rest for a few minutes in order to allow breadcrumbs to soak up moisture.
  3. Form 2-inch patties*
  4. Place patties in heated skillet. Cover and cook for 7-10 minutes or until the bottoms are deeply browned. Carefully flip patties and cook an additional 5 minutes. Remove patties from skillet at let cool a few minutes before serving.

NOTES

*If mixture is too wet to form patties, add more breadcrumb. Alternatively, if mixture crumbles, add water a few drops at a time.[br][br]Exchanges: 2 Carbs, 1 Protein, 1 Fat
