                                                            INGREDIENTS
- 1.5 cups frozen tater tots
- 1 pound turkey sausage, browned
- 8 large eggs, lightly beaten
- 2 tablespoons 2% milk
- 1/2 teaspoon salt
- freshly ground black pepper, to taste
- 1-16 ounce can refried beans
- 12 (6-inch) wheat or white tortillas
- 2 cups shredded cheddar cheese
- 1/4 cup chopped fresh cilantro leaves (optional)
INSTRUCTIONS
- Cook tater tots according to package instructions; cut in half and set aside.
- In a large skillet, brown the sausage, making sure to crumble while cooking. Remove sausage crumbles and set aside.
- Add eggs to the skillet along with a small amount of canola oil (if needed) and cook, whisking, until eggs just begin to set. Gently whisk in milk then season with salt and pepper, to taste. Continue cooking until thickened and no visible liquid egg remains; set aside.
- Spread beans down centers of tortillas.
- Top with tater tots, sausage, eggs, cheese and cilantro, if desired.
- Fold in opposite sides of each tortilla, then roll up, burrito-style. Place, seam-side down onto prepared baking sheet.
- Wrap individually in plastic wrap and place in freezer. Remove as needed.
- To cook: Remove plastic wrap and wrap in damp paper towel. Microwave on low for 1 to 2 minutes or until heated through. If baking, wrap burrito in foil and place in 350 degree oven until heated through, about 15 minutes. Serve immediately.
