Flounder a la Florentine

INGREDIENTS

  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 (10 oz) package frozen chopped spinach, thawed and well-drained
  • 4 (5 oz) 1/2-inch thick flounder fillets
  • 2 teaspoons lemon juice
  • 1 teaspoon Creole seasoning
  • 1/4 cup Italian-seasoned breadcrumbs
  • 2 tablespoons Parmesan cheese shreds
  • 2 tablespoons butter, melted

INSTRUCTIONS

  1. Stir onion and garlic into chopped spinach.
  2. Coat dull side of 4 (12-inch) squares of heavy-duty aluminum foil with cooking spray. Place a fillet in the center of each square; brush each fillet evenly with lemon juice, and sprinkle with Creole seasoning.
  3. Spoon spinach mixture evenly over fillets.
  4. Combine breadcrumbs, Parmesan cheese and butter; spoon evenly over spinach mixture, pressing gently. Fold foil to seal.
  5. Bake at 350 degrees for 30 minutes or until fish flakes easily with fork.
