Fall Produce is Nutrient-Rich

INGREDIENTS

  • 1 (18 oz) box yellow cake mix
  • 6 tablespoons butter, melted
  • 13 oz jar pumpkin butter
  • 3 eggs
  • 1 tablespoon flour
  • cup sugar
  • cup butter, softened
  • 3 tablespoons low-fat milk
  • 1 teaspoon cinnamon

INSTRUCTIONS

  1. Heat oven to 350 degrees. Reserve 1 cup of cake mix and set aside.
  2. Mix remaining cake with 6 tablespoons melted butter and 1 egg. Press mixture lightly into the bottom of a 9×13-inch baking dish.
  3. Mix pumpkin butter with remaining 2 eggs and milk, and pour over cake mixture in pan.
  4. Mix remaining 1 cup cake m ix with flour, sugar, remaining butter and cinnamon, and crumble over top of pumpkin layer. Bake 35-40 minutes or until golden brown. Cool and serve.

NOTES

Makes 16 squares.
