Easy Skillet Tacos

INGREDIENTS
- 1 pound extra lean ground beef
- 1/2 cup finely chopped onion
- 1 tablespoon chili powder
- 1 1/2 teaspoons groun cumin
- 1 teaspoon salt
- 1 (15 oz) can pinto beans, rinsed and drained
- 1 (8 oz) can tomato sauce
- 3/4 cup water
- 1/2 cup salsa
- 1 1/2 cups shredded 2% milk Cheddar cheese shreds
- 1 tablespoon chopped fresh cilantro
- 12 corn tortillas
- Additional toppings: shredded lettuce, diced tomato,
- avocado, salsa & jalapenos, optional
INSTRUCTIONS
- In large skillet, cook ground beef over medium-high heat, stirring
- until beef crumbles and is no longer pink. Add onion, chili powder,
- cumin and salt. Cook over low heat, stirring to prevent sticking,
- for about 15 minutes.
- Stir in beans, tomato sauce, water, and salsa. Mash pinto beans
- in skillet with a fork, leaving some beans whole. Bring to a boil;
- reduce heat and simmer uncovered for 10 minutes or until liquid is
- reduced.
- Top evenly with cheese and cilantro. Cover, turn off heat, and
- let stand 5 minutes or until cheese is melted. Serve with corn
- tortillas and desired toppings.
