Easy Greek Shrimp Salad

INGREDIENTS

  • Salad:
  • 1 head red-leaf lettuce, chopped
  • 1/2 small red onion, sliced thinly
  • 1 (14-ounce) jar artichoke hearts, drained and roughly chopped
  • 1/2 (12-ounce) jar roasted red pepper, drained and chopped
  • 1/3 cup toasted pine nuts
  • 1 1/2 pounds cooked medium-sized shrimp
  • Zesty Red Wine Vinaigrette:
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

INSTRUCTIONS

  1. Layer all salad ingredients in a large salad bowl.
  2. Combine all vinaigrette ingredients in a mason jar, and shake until combined. (Or whisk together in a bowl). Pour over salad and toss to combine. Enjoy immediately!
