Classic Hummus

INGREDIENTS

  • 1 (15-ounce) can garbanzo beans, drained and rinsed
  • 2 cloves garlic
  • 2 tablespoons green onions, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup tahini
  • 1/2 lemon, juiced (about 2 tablespoons)
  • 1/4 teaspoon cumin
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper (optional)
  • 2 tablespoons olive oil
  • 4 tablespoons water

INSTRUCTIONS

  1. Combine chickpeas, garlic, green onion, parsley, salt, pepper, and cumin in food processor bowl. Then add the tahini last.
  2. Pulse 2-3 times to rough chop.
  3. Set to puree continuously, and add olive oil then water, 1 tablespoon at a time. Add additional water if needed to achieve desired texture.
  4. Garnish with additional parsley and a sprinkle of cayenne pepper, if desired.
  5. Store in airtight container in the fridge.
