Citrus Salad with Black Beans and Feta Crumbles
Salad
INGREDIENTS
- 12 cups romaine lettuce, chopped
- 1 1/2 cup radishes, sliced
- 2 cups canned black beans, rinsed & drained
- 2 oranges, segmented
- 2 green onions, sliced
- 1/2 cup crumbled reduced-fat feta cheese
- 1/2 cup Orange-Oregano Dressing
- Orange-Oregano Dressing
- 1/2 teaspoon orange zest, freshly grated
- 1/2 cup orange juice, preferably freshly squeezed
- 1/4 cup cider vinegar
- 1 tablespoon extra-virgin olive oil
- 1 1/2 teaspoons fresh oregano, chopped, or 1/3 teaspoon dried
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
INSTRUCTIONS
- Combine lettuce, radishes, beans, orange segments, green onions, feta crumbles in a large bowl and toss.
- Place all dressing ingredients in a jar. Cover and shake to combine.
- Add dressing and toss to coat. Divide onto 4 plates and serve.
