Citrus Risotto
Salad
INGREDIENTS
- 6 cups (Healthy Request) chicken broth
- 1 teaspoon each grated lemon and lime rind
- 3 tablespoons each fresh lemon and lime juice
- 1 large onion, chopped
- 2 tablespoons olive oil
- 2 cups uncooked Arborio rice
- 2 tablespoons butter
- 1/2 cup freshly grated reduced-fat Parmesan cheese
INSTRUCTIONS
- Bring first 5 ingredients to a boil in a large saucepan.
- Saute onion in hot oil in a large saucepan over medium high until translucent.
- Add rice, and cook, stirring constantly, 2 minutes. Reduce heat to medium; add 1/2 cup hot broth mixture. Cook, stirring constantly, until liquid is absorbed. Repeat with remaining hot broth mixture, 1/2 cup at a time. Cooking time is 20 to 30 minutes.
- Remove from heat, stir in butter and cheese.
