Cherry Bran Muffins

INGREDIENTS

  • 1 ½ cups dried cherries, or raisins
  • 1 cup wheat bran
  • 1 cup milk of choice
  • 1/3 cup sugar
  • 1/4 cup vegetable oil
  • 1/4 cup molasses
  • 1 tsp vanilla
  • 2 eggs
  • 1 ½ cup flour
  • 1 tsp baking soda
  • ½ tsp salt

INSTRUCTIONS

  1. Preheat oven to 375º.
  2. Line a muffin tin with 12 muffin cups or use nonstick cooking spray.
  3. In a large bowl, combine cherries or raisins, bran, milk, sugar, oil, molasses, vanilla, and eggs. Let stand for 10 minutes.
  4. In a separate bowl, mix together flour, baking soda, and salt. Add the flour mixture to the bran mixture and stir just until moistened. Be careful not to over-mix; batter should be lumpy.
  5. Spoon batter in the prepared muffin cups. Bake for 20-25 minutes or until toothpick inserted in middle comes out clean.
