INGREDIENTS
- 2 packages Central Market Quick Heat Quinoa & Bulgur, prepared (or 4 cups cooked grain of choice)
- 1 pint grape tomatoes, halved
- 4 oz cooked chicken or firm tofu
- 4 oz fresh mozzarella, cut into bite-size
- 2 Tbsp fresh basil, chopped
- 2 Tbsp extra virgin olive oil
- Drizzle of balsamic vinegar or lemon juice
- Pinch of salt, pepper, and Italian seasoning
INSTRUCTIONS
- Mix all ingredients in a large bowl. Portion into 4 individual bowls.
