  • 2 tomatoes, chopped
  • 1 small zucchini, chopped
  • 1/3 cup finely chopped red onion
  • 1/3 cup fresh basil leaves, chopped
  • 2 ½ tablespoons balsamic vinegar
  • 2 cloves garlic, finely chopped
  • 1 ½ tablespoons olive oil

INSTRUCTIONS

  1. Cook orzo according to package directions; drain and set aside.
  2. In large bowl, combine all ingredients. Cover and chill at least 1 hour before serving.
