Bacon-Wrapped Mini Meatloafs

INGREDIENTS
- 1 small onion, finely minced
- 1/2 teaspoon minced garlic
- 1 tablespoon olive oil
- 1/3 cup breadcrumbs
- 1/4 cup tomato sauce
- 1 large egg
- 2 tablespoons Worcestershire sauce
- 1 1/2 pounds extra lean ground beef
- 2 teaspoons Creole seasoning
- 1/2 teaspoon fresh cracked black pepper
- 6 slices bacon
- Sauce:
- 1/4 cup tomato sauce
- 1 tablespoon ketchup
- 1 tablespoon Worcestershire sauce
INSTRUCTIONS
- In large oven-proof skillet, sauté onion and garlic in olive oil; set aside to cool slightly.
- In large bowl, combine breadcrumbs, tomato sauce, egg, Worcestershire sauce, ground beef, Creole seasoning, black pepper and onion mixture. Mix gently and form into 6 small oval meatloaves.
- Wrap 1 slice of bacon around each meatloaf, carefully tucking end of bacon on bottom. In same skillet, brown the meatloaves for about 4 minutes on each side. While meatloaves are browning, mix together sauce ingredients.
- Once meatloaves are browned, top evenly with sauce. Add 1/2 cup water to skillet and place in 350 degree oven for 20 minutes.
