Apple Cabbage Slaw

INGREDIENTS
- [b]Slaw:[/b]
- 1 head (approximately 8 cups) Napa cabbage, shredded
- 1 Red Delicious apple, julienned
- 1 green onion, thinly sliced
- 2 Tbsp cilantro, chopped
- 1/4 cup almonds, sliced
- 2 Tbsp hemp seeds, raw
- 1/2 tsp salt
- 1/4 tsp fresh ground black pepper
- [b]Dressing:[/b]
- 1/3 cup extra virgin olive oil
- 1/4 cup rice vinegar
- 2 Tbsp tamari
- 1 Tbsp fresh ginger, minced
- 2 cloves garlic, minced
- 1 tsp honey
INSTRUCTIONS
- Combine all salad ingredients into a large bowl, toss together, set aside.
- In a small bowl, whisk together all of the dressing ingredients until well blended.
- Pour dressing over salad mixture, toss, and serve.
