Mason Jar Shrimp and Feta Cobb Salad

INGREDIENTS

  • ½ cup cherry tomatoes, sliced
  • 2 tablespoons nonfat or yogurt-based dressing of your choice
  • ½ cup cucumber, chopped
  • 1-2 tablespoons red onion, diced
  • 1 ½ – 2 cups greens (Romaine, spring mix, baby spinach, etc.)
  • ¼ cup feta cheese, crumbled
  • 3 ounces cooked shrimp
  • 1 boiled egg, chopped
  • ¼ small avocado

INSTRUCTIONS

  1. Layer tomatoes and vinaigrette in the bottom of a wide-rimmed Mason jar. Add cucumber, red onion, greens, feta cheese, shrimp and boiled egg. Cover with lid and seal until lunch-time, or overnight (up to 18 hours).
  2. Once ready to eat, shake jar to combine ingredients and enjoy!
