Orange and Rosemary Roasted Cornish Game Hens

INGREDIENTS
- 4 Cornish game hens
- 1 orange, sliced into wedges
- 4-6 springs fresh rosemary
- 1 onion, sliced into wedges
- 4 teaspoons olive oil
- 4 garlic gloves, minced
- Salt and pepper
- ½ cup chicken broth
INSTRUCTIONS
- Preheat oven 450 degrees F. Pat hens dry with a paper towel. Lightly season inside of hens with salt and pepper. Stuff each cavity with 1 orange wedge, 1 spring rosemary, and 1 piece onion.
- Rub the outside of each hen with 1 teaspoon olive oil and 1 clove minced garlic. Arrange hens in a roasting pan. Season outside of hens with salt and pepper. Roast in oven for 25 minutes.
- Reduce heat to 350 degrees F and baste hens with chicken broth. Roast an additional 25 minutes, or until hens are golden brown and juices run clear.
- Remove hens from oven and allow to rest 10 minutes before serving. Garnish with additional rosemary.
