Mason-Jar Pho

INGREDIENTS

  • 1 ½ teaspoons bouillon base (chicken or beef)
  • 1-2 teaspoons Hoisin sauce
  • 1-2 teaspoons Sriracha
  • 2/3 cup prepared rice noodles
  • 1/2 cup red bell pepper, sliced
  • ¼ cup red onion, thinly sliced
  • 3 ounces rotisserie chicken or leftover meat (chicken, beef, or pork)
  • ½ cup bean sprouts
  • 1 cup fresh spinach, chopped
  • 3-4 sprigs fresh cilantro
  • 3 slices jalapeno (optional)
  • 1-2 lime wedges
  • Fresh mint or basil (if desired)
  • 2 cups boiling water

INSTRUCTIONS

  1. Layer bottom of a wide-rimmed Mason jar with bouillon base, Hoisin sauce and Sriracha. Add rice noodles, bell pepper, onion, meat, bean sprouts, spinach, cilantro, and jalapeno. Place lime wedges and any desired herbs on top. Cover with lid and refrigerate until ready to eat, or overnight.
  2. Once ready to eat, remove lid and pull out lime wedges. Squeeze limes and pour boiling water into jar.
  3. Carefully return lid and gently shake jar to stir contents. Enjoy immediately.
