Cauliflower and Gorgonzola Au Gratin

INGREDIENTS
- 1 head cauliflower florets
- 2 tablespoons olive oil
- Salt and black pepper
- 2 cloves garlic, minced
- ½ cup Gorgonzola or blue cheese crumbles
- 3 tablespoons Italian-seasoned breadcrumbs
INSTRUCTIONS
- Preheat oven to 375 degrees F. In a large bowl, toss together cauliflower florets and olive oil. Arrange florets in a 9×11-inch baking dish and sprinkle with salt and black pepper. Bake for 15 minutes.
- Remove from oven and sprinkle minced garlic, gorgonzola, and breadcrumbs over the top. Bake for an additional 7-10 minutes. Enjoy!
