Banana Zucchini Bread

INGREDIENTS

  • 1 cup sugar
  • 1/2 cup canola oil
  • 1 cup mashed ripe banana (about 2 medium sized bananas)
  • 1 egg
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup zucchini, shredded
  • 1/2 cup pecans, chopped

INSTRUCTIONS

  1. Preheat oven to 350 degrees F
  2. Beat together the sugar and oil
  3. Add in the mashed banana, egg, and vanilla
  4. In a medium bowl whisk together both flours, cinnamon, baking powder, baking soda and salt
  5. Add the dry ingredients into the wet and stir on low until just combined
  6. Using a spoon fold in the zucchini and pecans
  7. Spray a loaf pan with cooking spay and pour in batter
  8. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean
