Slow Cooker Smoky Sweet Potato Chili

INGREDIENTS
- 2 cans (15.5-ounce) no salt added black beans, drained and rinsed
- 1 (9-ounce) medium sweet potato, washed and diced into 1/4-inch cubes
- 1 (28-ounce) can diced tomatoes, no added salt
- 1/2 medium onion, finely chopped
- 1 red bell pepper, seeded and diced
- 2 medium carrots, diced
- 2 cloves garlic, minced
- 1/2 cup water
- 1 small jalapeno, seeded and minced (optional)
- 1 teaspoon chili powder
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1/4 teaspoon kosher salt
- Toppings (optional): avocado slices, chopped cilantro, plain greek yogurt or sour cream
INSTRUCTIONS
- Combine all ingredients in slow cooker and stir. Set to low, cover, and cook for 3-4 hours. Serve with toppings of your choice.
