Easy Greek Shrimp Salad

INGREDIENTS
- Salad:
- 1 head red-leaf lettuce, chopped
- 1/2 small red onion, sliced thinly
- 1 (14-ounce) jar artichoke hearts, drained and roughly chopped
- 1/2 (12-ounce) jar roasted red pepper, drained and chopped
- 1/3 cup toasted pine nuts
- 1 1/2 pounds cooked medium-sized shrimp
- Zesty Red Wine Vinaigrette:
- 1/3 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
INSTRUCTIONS
- Layer all salad ingredients in a large salad bowl.
- Combine all vinaigrette ingredients in a mason jar, and shake until combined. (Or whisk together in a bowl). Pour over salad and toss to combine. Enjoy immediately!
