Cheddar Ranch Potato Salad

INGREDIENTS

  • 3-pounds baby red potatoes
  • 2 cups plain Greek yogurt, nonfat
  • 1 packet Ranch dressing mix
  • 2 tablespoons lemon juice
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 1 bunch green onions, sliced
  • 6 slices bacon, cooked and chopped

INSTRUCTIONS

  1. Cook potatoes in a large pot of boiling water, until fork tender, about 20 minutes. Drain, rinse under cold water, and set aside to cool. Once cooled to room temperature, halve the potatoes and add to a large bowl.
  2. In a smaller bowl, stir together Greek yogurt, Ranch seasoning, lemon juice and black pepper.
  3. Add Greek yogurt mixture to potatoes and toss until combined. Add cheddar, green onions and bacon. Toss until combined. Refrigerate at least 1 hour before serving.
