No-Bake Sweet & Salty Snack Bars

INGREDIENTS

  • 3 tablespoons honey
  • ½ cup natural peanut, almond, or Sun- Butter
  • Pinch of salt
  • ¼ cup dried fruit
  • ½ cup puffed rice cereal
  • ½ cup crushed pretzels
  • ½ cup pumpkin seeds or chopped nuts
  • ¾ cup old fashioned oats
  • ¼ cup mini semisweet chocolate chips

INSTRUCTIONS

  1. Line a 9x9-inch square baking dish with wax paper, leaving a few inches of overhang on sides to allow for easy removal.
  2. In a microwave-safe bowl, add honey, peanut butter and salt. Microwave for 1 minute, stirring every 20-30 seconds, until well combined. Allow ingredients to cool and thicken.
  3. Toss together remaining ingredients in a large mixing bowl. Pour wet ingredients into dry ingredients and mix until fully incorporated.
  4. Transfer mixture to prepared pan and use a spatula to spread evenly and press down firmly. Cover pan with aluminum foil and place in the fridge or freezer to set for 2 hours, or overnight.
  5. Once bars have set, remove from pan and slice into bars. Store in the fridge or freezer for best results.
