Delightful Baked Apples

INGREDIENTS
- 4 large Fuji or honey crisp apples
- 4 teaspoon butter, unsalted
- ½ cup old-fashioned rolled oats
- ¼ cup dark brown sugar, packed
- 2 Tablespoon all-purpose flour
- 2 Tablespoon pecans, chopped
- ¾ teaspoon cinnamon
- ¼ teaspoon allspice
- 1 Tablespoon canola oil
- 4 Tablespoon vanilla Greek yogurt
INSTRUCTIONS
- Preheat oven to 350 degrees F. Using a paring knife and spoon, or melon baller, carve out & discard each apple core. (Be careful not to puncture the bottom). Portion 1 teaspoon butter in bottom of each apple core. Set aside.
- In a small mixing bowl, combine oats, brown sugar, flour, pecans, cinnamon, allspice & canola oil. Divide mixture between the 4 apples, firmly packing into each core.
- Place apples in a 9”x9” pan & bake uncovered for 35 minutes. Cover with aluminum foil and bake an additional 25-30 minutes, or until apple skin starts to wrinkle.
- Once removed from oven, slice apples in half. Serve hot with a dollop of Greek yogurt.
