Zesty Lime, Shrimp, & Avocado Salad

INGREDIENTS
- ¼ cup red onion, diced
- 2 limes, juiced
- 1 teaspoon olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 medium tomatoes, diced
- 1 pound cooked shrimp, peeled & coarsely chopped
- 1 jalapeno, seeds removed, diced
- 2 avocados, chopped in ½ inch cubes
- 2 Tablespoons fresh cilantro, chopped
INSTRUCTIONS
- In a small bowl, combine red onion, lime juice, olive oil, salt & pepper. Set aside to marinade approximately 15 minutes.
- In a medium-sized bowl, add tomatoes, shrimp, jalapeno, avocados, & cilantro. Drizzle with lime mixture. Gently toss to combine ingredients. Serve immediately.
