Bacon-Wrapped Mini Meatloafs

INGREDIENTS

  • 1 small onion, finely minced
  • 1/2 teaspoon minced garlic
  • 1 tablespoon olive oil
  • 1/3 cup breadcrumbs
  • 1/4 cup tomato sauce
  • 1 large egg
  • 2 tablespoons Worcestershire sauce
  • 1 1/2 pounds extra lean ground beef
  • 2 teaspoons Creole seasoning
  • 1/2 teaspoon fresh cracked black pepper
  • 6 slices bacon
  • Sauce:
  • 1/4 cup tomato sauce
  • 1 tablespoon ketchup
  • 1 tablespoon Worcestershire sauce

INSTRUCTIONS

  1. In large oven-proof skillet, sauté onion and garlic in olive oil; set aside to cool slightly.
  2. In large bowl, combine breadcrumbs, tomato sauce, egg, Worcestershire sauce, ground beef, Creole seasoning, black pepper and onion mixture. Mix gently and form into 6 small oval meatloaves.
  3. Wrap 1 slice of bacon around each meatloaf, carefully tucking end of bacon on bottom. In same skillet, brown the meatloaves for about 4 minutes on each side. While meatloaves are browning, mix together sauce ingredients.
  4. Once meatloaves are browned, top evenly with sauce. Add 1/2 cup water to skillet and place in 350 degree oven for 20 minutes.
