  • 1 1/2 cups reduced fat Mexican cheese shreds
  • 4 tablespoons olive oil
  • 1 cup 1% milk
  • 1/2 cup all purpose flour
  • 1 teaspoon baking powder
  • 1 1/2 cups low fat small curd cottage cheese
  • 1 (10 oz) can diced tomatoes with green chilies, drained

  1. In large bowl, stir together all ingredients.
  2. Pour mixture into 9x13-inch glass baking dish sprayed with cooking spray.
  3. Bake at 350 degrees for 25-30 minutes until middle is set.
