INGREDIENTS
- 8 eggs, beaten
- 1 1/2 cups reduced fat Mexican cheese shreds
- 4 tablespoons olive oil
- 1 cup 1% milk
- 1/2 cup all purpose flour
- 1 teaspoon baking powder
- 1 1/2 cups low fat small curd cottage cheese
- 1 (10 oz) can diced tomatoes with green chilies, drained
INSTRUCTIONS
- In large bowl, stir together all ingredients.
- Pour mixture into 9x13-inch glass baking dish sprayed with cooking spray.
- Bake at 350 degrees for 25-30 minutes until middle is set.
