Grilled Halibut with Lemon-Basil Butter

INGREDIENTS

  • 1 cup loosely packed fresh basil leaves
  • 1 medium shallot, coarsely chopped
  • 6 tablespoons unsalted butter
  • 1 teaspoon lemon zest
  • ½ teaspoon salt
  • 6 (6 oz.) halibut fillets

INSTRUCTIONS

  1. Place basil and chopped shallot in mini food processor to finely chop.
  2. Add butter and process until blended stopping occasionally to scrape down sides. Transfer to small bowl; stir in lemon zest and season with salt.
  3. Rub grill grate with olive oil. Heat the grill to medium and cook halibut about 4 to 5 minutes on each side or until fillets are just opaque in center. Transfer fish to individual plates, spread each with 1 tablespoon lemon-basil butter and serve.
