Chicken Vermicelli

INGREDIENTS

  • 1 (5 oz) box vermicelli
  • 1 cup chopped onion
  • 3 tablespoons cooking oil
  • 4 bone-in chicken breasts, cooked and chopped (~3 cups cooked chicken)
  • 2½ cups low sodium chicken broth
  • 1 (14 oz) can Rotel Tomatoes with Green Chilies
  • ¼ teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 cup reduced-fat cheddar cheese shreds
  • Tabasco sauce (optional)

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. In large Dutch oven, brown vermicelli and onion in the oil, stirring constantly for 5 to 7 minutes.
  3. Stir in chicken, chicken broth, Rotel, garlic powder, salt, cumin, cheese and Tabasco.
  4. Pour mixture into 9 X 13 inch baking dish sprayed with cooking spray. Cover with foil and bake 20 minutes. Remove foil and bake an additional 10 minutes.
